Describing a German Eiswein, veteran wine critic Michael Broadbent evoked the character of this high acid Riesling through metaphors of high pitch. He’s not alone in making these associations. I too, and many of my wine writer peers draw on lofty pitches when talking about this mouth-watering component of wine. And this link between acidity and pitch doesn’t only exist in analogies, but perceptual experience as well.
